Why we throw away lemon peel after extracting its juice?

We should not. The peel has lot of medicinal values. Lemon peels are rich in citric acid and vitamin C. Detoxifying your body is an important part of feeling your best.

The peel has high nutritive content, add the peel to more of your meals. You can grate the lemon peel and add it to your soups, salads and many other dishes.

Why lemon can be bitter?

The white pith of the lemon is unpleasant, while the zest has a great flavor. But whether a recipe calls for grated lemon zest, peel or rind, you leave out that unpleasant white pith.

Whole Lemon Ice Cubes

Whole Lemon Ice Cubes add great flavor when added to a glass of water or juice blends, added to sauces, smoothies or even soups.

These lemon cubes are super easy to make. Add some honey, cinnamon, peppermint, basil or ginger to it for more flavour. Depends where you are going to use those lemon cubes.

In this recipe I am going to use the whole lemon - even the bitter part, because if I use it in soups I do not mind the bitter flavour. Of course, you can cut it off and grate the peel only - tastes much better!

Grab some (organic) lemons & wash them with apple cider vinegar from the outside. Let it dry.

Prepare an ice cube tray

Cut the lemons into small pieces (cut the rind off and you just got rid of the bitterness.)

Throw them into a blender and add a little water (add some of the above mentioned spices if you would like to). Blend them until you get a smooth texture.

Fill the ice cube tray with the lemon pulp

Put into a freezer for a few hours (or overnight)

Pop them out and enjoy the benefits
